
Taco Casserole

Another crowd-pleasing recipe. This one always has us going for seconds. I always keep the ingredients for this recipe stocked up too!
Ingredients:
1lb ground beef or ground turkey
Taco seasoning packet
1 can Mild Rotel (can do 2 if you're a tomato person)
1 can Corn, drained
1 can Black Beans, drained
1 can Cheese Soup
Shredded cheese of your preference (we always have fiesta blend)
1/2 a can of diced jalapenos if you want. some spice!
2-4oz Velveeta block cubed (depends how cheesy you like it, I typically use about half of an 8oz block)
Fajita flour tortillas
Instructions:
Preheat your oven to 350 degrees
Start cooking your ground beef in a skillet
While beef is cooking, cube your Velveeta and set aside
In a bowl mix corn, black beans, Rotel, cheese soup and 1/4 cup shredded cheese & jalapenos if you. prefer
Once your meat has browned, add seasoning and mix.
Add Velveeta cubes to your skillet and stir frequently until the Velveeta melts with your ground beef.
Add your cheesy ground beef to the bowl of mixed ingredients and stir well
Greese your 8x11 dish
Layer your mixture thinly on the bottom then cover with tortillas like you're making a lasagna
Then layer with mixture again, and top with tortillas
Layer with mixture and top with cheese.
Cover with foil and bake for 30-45 minutes.remove foil last 5 minutes
Let cool 5 minutes and cut into squares
Serve topped with hot sauce or sour cream
I’m about taste > appearance when it comes to this casserole. I can never get it to sit in perfect layered lasagna style squares after baking 🤷🏼♀️
