
Fiesta Shrimp Taco Bowls

One of my favorite and quick dishes to make is Taco bowls! We typically have all the ingredients in our fridge and pantry which makes this one of our go-to meals! It takes about 15 minutes to make and is delicious, plus we never feel sluggish after eating this dinner! Plus it’s roughly 353 calories ✨Find the macro breakdown at the bottom 👇🏼
Shrimp taco bowls for two
Ingredients:
2 tbsp Butter
Uncooked, peeled shrimp (we do about 5-8 shrimp a person)
1/2 tbsp Chili Powder
Pinch of Salt
Dash of Garlic Powder
1 bag of boil in bag brown rice
1 can Black beans
1 avocado
1 Lime
optional additions to jazz it up a little more:
Spinach (if desired)
Sour Cream (if desired)
shredded cheese (if desired)
Directions:
Begin boiling your water for the rice. Once the water has boiled, add your bag of rice
While rice is cooking, melt butter in a pan, then add your desired amount of shrimp& season with salt, chili powder, and Garlic Powder. I typically go heaviest with the chili powder. (taco seasoning works too as a good substitute)
Cook your shrimp for 10-12 minutes tossing every couple of minutes
once shrimp has started, heat your black beans in a pan on high for about 5 minutes
Half your avocado and slice it into however big chunks you prefer
Make your bowls: Layer bottom with rice, add beans, and avocado, and finally shrimp.
Squeeze half a fresh lime over each bowl!
Top w/ your favorite condiments (hot sauce, sour cream, cheese, etc.)
You can also add spinach or shredded lettuce and sour cream. This amount makes exactly enough for two bowls. I literally just put half of each ingredient into each of our bowls. ☺️
