Low Cal- Shrimp Boats

Here’s a yummy low cal + under 20 minute dinner! For my size portions it’s about 299 calories, for Jamison’s portions it’s about 418 calories! If you can’t tell we eat a lot of mex style foods 😊 Also don’t worry, im not starving myself, this prego Mom eats PLENTY of snacks and other meals throughout the day 🤪

Ingredients:

Romaine hearts (3 per person)

Shrimp (10-15)

chili powder 1/2 tsp

Garlic salt 1/2tsp

1 pack Spanish Ready Rice (per 2 people)

1 can Low sodium Black beans



Instructions:

  1. Spray large pan

  2. Peel shrimp & toss in pan with garlic salt & chili powder- flip every so often until cooked through (about 10min)

  3. heat your black beans

  4. Cook your rice

  5. wash your romaine hearts and set out your leaves

  6. fill your leaves w/ rice, beans, and shrimp!

  7. top with any other of your other favs (sour cream, siracha, avocado)



How I portion my plate:

3 leaves

1/2 C beans split between the leaves

1/3C rice Split between the leaves

1-2 shrimp per leaf

topped w/ siracha and 🥑 when we have them

Jamison’s plates get more rice & shrimp :)
