
Air Fryer Chicken Bites

Here is my favorite and super-easy way to make air fryer "chicken nuggets". I like to do this as part of my meal prep lunches and pair it with either veggies or add it to a salad for protein. It takes maybe a total of 20 minutes to prep and cook and requires minimal effort which is always a plus! I hate when meal prepping takes a lot of time and effort, so I try to prep things that are healthy and easy to do, since having a baby does not allow for a lot of independent cooking time. This recipe accounts for small portions for 4 days of lunch. If you like a lot of protein, definitely double it as this is a small portion recipe.
Recipe:
2 chicken breasts
olive oil (or your fav cooking oil)
salt
pepper
Progresso bread crumbs (I prefer the garlic and herb flavor)
Instructions
Cut chicken breasts into bite-size pieces (about 1/2 inch big) and put them in a bowl
Drizzle olive oil, salt, pepper, and any other seasonings you prefer to the chicken and mix
Add bread crumbs (1/4 cup) to the chicken and mix
Make sure your chicken is lightly coated in the bread crumbs, add more if you need to.
Spray bottom of air fryer with Pam
Cook in air fryer on 400 for 15 minutes, flipping halfway through.
Enjoy!
This recipe can be adapted as you prefer. My 1 year old loves to eat these chicken bites plain! Sometimes I like to add different seasoning varieties, and it always turns out great! They may look a little brown or crispy, but these chicken bites always end up being juicy! Try them and let me know what you think!
