Garlic Mashed Taters
A classic side dish, not the boxed stuff.
Ingredients:
5-6 medium/large potatoes (i try to do 1-2 per person)
3tbsp Butter
1/4 Cup Chicken Stalk or broth
2/3 Cup Sour cream
4oz Cream Cheese
3 tbsp cream or half & half
2tbsp minced Garlic
1tsp Garlic Powder
Salt & Pepper to taste
Directions:
Wash, peel, & dice your potatoes. (1/4 inch in size)
Put potatoes in a large pot with Water, Chicken stock, and Minced Garlic. Boil until they are soft enough to break apart with a fork.
Drain the potatoes and place them in mixing bowl with Butter, Sour cream, Garlic powder, and Salt and Pepper.
Mix on Low setting, once potatoes are mashed add in the cream cheese and mix on low setting until combined, then mix in the cream/half& half.
Taste and mix in more seasoning if needed then serve hot!
Prepping for later? Just coat a baking dish, add the potatoes, & top with 1tbsp butter divided. Then when ready, Bake on 350 until warm (20 minutes ish)
