Strawberry Cream Cheese Pie Recipe

Yummy Strawberry Cream Pie!



I like to make this recipe when I am craving something sweet but creamy! In the spring and summer berry pies are my WEAKNESS!!! I always keep at least 1 graham cracker pie crust in the pantry, so I can make a berry pie whenever I am craving it. This pie is best to make the night before you want to serve or early in the morning as it has to set for 8 hours. I've tried making it in a rush and freezing it for 4-6 hours but it never turns out quite as good. This is also great with a homemade salty pretzel pie crust, but with a toddler, there isn't always time for that. LOL


Pie crust: I opt for an easy store bought graham cracker pie crust! I recommend larger than 9inch, os it doesn't overflow!


Cream cheese layer:

8oz softened cream cheese

1 C sugar

1tbsp Vanilla extract

Lemon Zest



Strawberry Jello Layer:

1 3/4 C Water

1/4 C Corn Starch

1 C sugar

3oz Strawberry Jello packet


Instructions:

1. Wash and slice 2 cups of strawberries (quarters of halves work best)

2.In a bowl mix: cream cheese, sugar, vanilla extract, & lemon zest until fluffy/whipped

3. Spread over pie crust

4. In a sauce pan or pot bowl water, corn starch, and sugar until thick and clear

5. Remove from Heat and stir in Jello packet, then let it cool a few minutes

6. Spread strawberries overtop the cream cheese layer of your pie

7. Pour Jello mixture over your strawberry layer

8. Add any additional strawberries to your liking

9. Cool in fridge for 8 hours, so the Jello will set.

10. Slice and serve with whip cream
